O trabalho teve como objetivo, descrever a percepção do Responsável Técnico RT na construção/modelagem da cultura de segurança dos alimentos nas empresas que produzem e/ou comercializam alimentos, aonde atuam como RT. Para conhecer sobre a percepção do RT sobre as relações entre Segurança dos Alimentos e o envolvimento da alta gestão e os colaboradores nas organizações onde atua como tal e também, sua autopercepção frente a esse tema, foi estruturado um instrumento, um questionário, a partir daquele já validado por Galvão, (2018) e Galvão; Ferreira; Balian, (2020). Inicialmente foram convidados 10 profissionais da área de alimentos, não necessariamente RT, esses especialistas avaliariam o instrumento. Não houve considerações. O instrumento utilizado neste estudo (Apêndice B) foi então organizado em 29 questões. A pesquisa foi feita exclusivamente de forma remota, onde a abordagem era feita pelas redes sociais. Do total de 120 participantes, foram excluídos seis respondentes. Conclui-se que o tempo de liderança da alta gestão da empresa não se mostrou um fator relevante, que a idade dos responsáveis técnicos não demonstrou relação direta e positiva na capacidade de se posicionar, os responsáveis técnicos se autodeclaram satisfeitos com o trabalho que desenvolvem, a participação da alta direção da empresa nas reuniões para discutir e desenvolver a qualidade e segurança dos alimentos na organização é favorável e que há relação direta entre a participação da alta direção da empesa e o engajamento dos trabalhadores na organização, em relação à qualidade e segurança dos alimentos.

The objective of the work was to describe the perception of the Technical Responsible RT in the construction/modeling of the food safety culture in companies that produce and/or sell food, where they work as RT. To learn about RT′s perception of the relationship between Food Safety and the involvement of senior management and employees in the organizations where it operates as such, and also its self-perception regarding this topic, an instrument, a questionnaire, was structured based on that already validated by Galvão, (2018) and Galvão; Ferreira; Balian, (2020). Initially, 10 food professionals were invited, not necessarily RT, these experts would evaluate the instrument. There were no considerations. The instrument used in this study (Appendix B) was then organized into 29 questions. The research was carried out exclusively remotely, where the approach was carried out via social networks. Of the total of 120 participants, six respondents were excluded. It is concluded that the leadership time of the company′s top management did not prove to be a relevant factor, that the age of the technical managers did not demonstrate a direct and positive relationship in the ability to position themselves, the technical managers declared themselves satisfied with the work they carry out, the participation of the company′s senior management in meetings to discuss and develop the quality and safety of food in the organization is favorable and that there is a direct relationship between the participation of the company′s senior management and the engagement of workers in the organization, in relation to quality and safety of food.
