Neste estudo analisa-se o suprimento de carne bovina para a Cidade de São Paulo, descreve-se seu atual sistema de distribuição de carne, determinam-se as margens de comercialização e a política de margem adotada pelos comerciantes varejistas e atacadistas, procurando-se ainda, identificar os principais problemas relacionados com a comercialização. Foram utilizados dados básicos secundários, colhidos junto ao Instituto de Economia Agrícola da Secretaria da Agricultura do Estado de São Paulo e da Fundação IBGE Instituto Brasileiro de Geografia e Estatística. Foram entrevistados e preenchidos questionários com gerentes de frigoríficos e de emprêsas transportadoras de animais vivos e carnes resfriadas. Com o objetivo de verificar se os “markups” no varejo e no atacado são percentuais ou não, utiliza-se um modêlo de regressão linear simples, sendo o ajustamento feito pelo método dos quadrados mínimos. Além disso, discutem-se os processos e sistemas de compra, transporte, processamento e distribuição de carne bovina na Cidade de São Paulo. Dá-se ênfase à análise dos canais de comercialização atualmente usados.
Abstract in English
This study focuses on certain problems related to the supplying of beef to the city of São Paulo. An attempt is made to describe the present system of distribution of beef, determine profit margins in operation and the policies of both wholesale and retail suppliers, in this way identifying the principal problems related to beef marketing. Basic, secondary data were used gathered from the Institute or Agricultural Economics or the Secretary of Agriculture of the State of São Paulo and the Brazilian Institute of Geography and Statistics. Managers of cold storage plants and of transportation companies were interviewed and asked, to fill on schedules. This was done both for distributors of frozen meats and for live animals. In order to determine if “mark-ups” were flexible or not a simple linear regression model of analysis was used adjusted through the use of the method of least squares.
