O objetivo deste estudo é abordar a segurança alimentar sob o enfoque qualitativo (em inglês, food safety). Usando-se a técnica de Conjoint Analysis avaliaram-se a estrutura de preferência e o comportamento do consumidor quanto aos principais atributos de higiene e qualidade no morango, comparando-se os indivíduos que têm o hábito de comprar em feira comum e em feira orgânica. O consumidor desempenha um papel fundamental na seleção dos atributos nos alimentos e é sua preferência que determina quais devem ser os mais importantes e quais devem estar ou não presentes no produto. Para qualquer programa governamental de garantia da segurança alimentar ou estratégia empresarial de segmentação de mercado e de introdução de novos produtos é preciso, antes, determinar a demanda do consumidor com relação aos atributos preferidos. A segurança alimentar é um problema que adquire importância crescente e de caráter complexo e multidisciplinar. Por isso, procurou-se apresentar, inicialmente, algumas das definições do termo food safety e uma caracterização generalizada do problema. Constatou-se pouca variação entre o comportamento dos consumidores de feira comum e os de feira orgânica. Com isso, a análise baseou-se na estrutura de preferência da amostra total. Os atributos de maior peso e importância para os consumidores da amostra estudada foram, primeiramente, a superfície e dano (32,01%), seguido do preço (26,91%) e do tamanho (24,35%). Presença ou não de certificação orgânica (10,28%) e irradiação iônica (6,46%) são de pouca importância na estrutura de preferência, o que denota um baixo desejo de permuta (trade off) entre estes atributos e um maior nível de segurança alimentar. Dados comportamentais de compra e sócio econômicos também foram coletados e comparados à pesquisa Feedback/Superinteressante sobre os hábitos alimentares do brasileiro. Em ambas as pesquisas o consumidor demonstrou possuir um bom conhecimento e preocupação com relação aos problemas que podem ser causados pela ingestão de alimentos. Quanto às variáveis sócio econômicas, observa-se que o interesse pelo food safety aumenta com a idade, renda e nível educacional. Sendo assim, podemos concluir que no Brasil, onde os índices de expectativa de vida aumentam juntamente com a renda per capita da população e o grau de instrução, o interesse e, conseqüentemente, a demanda por atributos de segurança também deverá ser maior. Por isso, as empresas e o setor governamental devem estar atentos e acompanhar essas mudanças.

The objective of this study is the food safety issue. The structure preferences and the consumer behavior were evaluated regarding the main hygienic and quality attributes in strawberries, using the Conjoínt Analysis methodology and comparing the people who buy from common and organic markets. The consumers have a fundamental role in food attributes selection, and it there preferences that determines which attributes must be the most important ones and which should be or not be present in the product. For any govemmental program for food safety warranty, or business strategy for market segmentation and for new product introduction it is necessary first of all to determine the consumer demand for the required attributes. The food safety is a problem that has been obtaining growmg importance and it has a complex and multidisciplinary nature. For this reason, some definitions of food safety and a general overview of the subject were presented at first. There were little variations between the consumer behavior on common and organic markets. Thus, the analysis was based on the structure of the total preference sample. The most important attributes of the studied sample were the surface damage (32.010/0), followed by the price (26.91 010), and the size (24.35%). The presence or not of the organic certificate (10.28%) and the ionic irradiation (6.46%) showed to be less important to the structure of preference, which denote a lower trade off between these attributes and a better food safety leveI. Behavior on purchase and socio-economic data were also collected and compared to Feedback/Superinteressante Research on the Brazilian eat habits. In both researches, the consumer showed a good knowledge and an accurate cone em about the problem that might occur by food intaking. Regarding the socio-economic variables, it was notice that the interest for food safety increases with age, income and educational leveIs. Thereby, we conclude that in Brazil where life expectation rate increases along with the income, and the leveI of instruction, the interest and consequently the demand for attributes of safety tend to be higher. Therefore, the companies and the govemment must be aware and attend these changes.
