Com o objetivo de estabelecer as quantidades consumidas de arroz na Colômbia e identificar as causas que levaram a uma diminuição do consumo a nível per-capita foi desenvolvida a estimação de uma função de demanda em arroz para a série de tempo compreendida entre 1960 e 1988, assim como a análise de uma pesquisa de corte transversal de rendas e despesas para a população urbana da Colômbia para o período de março de 1984 até fevereiro de 1985. Além disto, foi comparada a pesquisa de 1984-85 com uma pesquisa anterior também de corte transversal para o ano de 1981, a fim de identificar as causas possíveis que ocasionaram as diminuições no consumo per-capita, a nível de quintis de renda e por regiões. A estimação da função de demanda foi feita pelo método de mínimos quadrados ordinários com componentes principais pelo fato dos dados analisados terem problemas de multicolinearidade. Para a análise dos dados das pesquisas de corte transversal estes foram trabalhados a nível de equivalente adulto caloria, por quintis de renda e por regiões. Os resultados obtidos permitiram concluir que o consumo de arroz per-capita por ano a nível nacional está na ordem dos 30 kg e que vem enfrentando uma demanda decrescente para os últimos anos. Os resultados também indicam muito claramente, que o arroz continua sendo um produto muito importante para a população de baixa renda. Embora a suspeita que se tinha de que o consumo de arroz estava se deslocando para alimentos com mais ou menos as mesmas características como consequência de um efeito preço foi descartada pois as duas análises permitem identificar que este fato não está ocorrendo. Esta substituição parece ter-se dirigido para bens com um poder nutricional mais alto tais como laticínios, aves, frutas, carne de porco, etc. A causa principal que foi possível identificar como responsável por esta diminuição foi a tendência no crescimento em preços observada nos últimos anos que não conseguiu contrabalançar o efeito positivo da renda.

Rice consumption in Colombia

To determine rice consumption patterns and the reasons why the per capita consumption decreased, a demand function for rice for the period 1960 - 1988 was estimated using time series data. Cross sectional data from an urban household expenditure survey in Colombia conducted, between March 1984 and February 1985 was also analyzed. These data were compared with results from a cross sectional survey that took place during 1981, in order to identify the variables that contributed to decrease the per capita consumption of rice by levels and by regions. In the case of time series data, a demand function was estimated by the procedure of principal components ordinary least squares, given the presence of high multicollinearity in the data, diagnosticed through the two-stage least squares estimation. The cross sectional data was standardized in adult equivalent calories by income levels and regions. The results showed that the average per-capita consumption of rice in Colombia was 30 kg per year with a downward trend, corroborating the assumption of decreasing demand for the last years. The results demonstrated the relevance consumption at the lowest income levels population. The assumption of substitutability between rice and similar products by price competition was rejected, given the regression estimates and the cross sectional results. This substitution seems to be for foods like milk derivates, chicken, fruits, pork meat, etc. The main apparent reason for the decrease in the average consumption seems to be the upward trend in rice prices observed through the 1980’s.
