Esse estudo objetivou comparar os modelos multiway Tucker3 e PARAFAC para descrição da interação tripla entre variáveis que influenciam a maciez da carne bovina avaliada por consumidores em teste sensorial. Além disso, buscou-se descrever a interação tripla com a utilização de representações gráficas (joint plot) para auxiliar a interpretação entre os fatores que influenciam a qualidade da carne. O banco de dados do presente estudo foi composto de informações sobre classe sexual dos bovinos (fêmea, macho castrado e macho inteiro/não-castrado), características de carcaça (ossificação ou maturidade fisiológica e acabamento), qualidade de carne (cor e marmoreio) e testes de palatabilidade da carne (maciez, sabor, suculência e satisfação geral) obtidos em avaliações sensoriais. O modelo Tucker3 proporcionou 98,53% da variância explicada sobre a maciez da carne, enquanto o PARAFAC proporcionou 97,93%. Verificou-se que carnes de cores mais escuras (escore>6) foram mais associadas ao fator macho inteiro. O modelo Tucker3 também foi utilizado em conjunto com a análise de correspondência visando particionar as medidas de associação de tabelas de tripla entrada num conjunto de dados de qualidade de carne, bem como estabelecer sua quantificação para representação gráfica. Os resultados obtidos permitiram quantificar a inercia das interações, significância e a descrição gráfica das tabelas de tripla entrada: características dos animais (classe sexual) x carne (marmoreio ou gordura intramuscular) x suculência avaliada pelo consumidor. Adicionalmente, foi possível descrever as associações entre as variáveis ossificação (idade dos animais) x classe sexual x maciez da carne, bem como entre acabamento (escore de deposição de gordura na carcaça) x classe sexual x satisfação geral dos consumidores participantes do teste sensorial. As descrições das interações triplas entre esses fatores por meio da aplicação do modelo Tucker3 podem ser utilizadas para avaliação e melhoria das características de importância econômica para indústria, produtores e consumidores de carne bovina.

The aim was to compare multiway models such as Tucker3 and PARAFAC to describe the triple interaction between factors that influence the meat tenderness evaluated by consumers in a sensory test. In addition, we describe the triple interaction with the use of joint plots to help explain the factors that influence meat quality. The database of the present study consisted of information on bovine sex class (female, castrated and non-castrated male), carcass traits (ossification or physiological maturity and fatness), meat quality (color and marbling) and beef palatability (tenderness, flavor, juiciness and overall satisfaction) obtained from sensory tests. The Tucker3 model provided 98.53% of the explained variance on meat tenderness, while PARAFAC provided 97.93%. The darkest meat (color score>6) was found to be more associated with the non-castrated factor. The Tucker3 model was also used in combination with the correspondence analysis to partition the triple entry table association measures into a meat quality data set as well as to quantify them for graphical representation. The results allowed to quantify the interaction inertia, significance and graphical description of the triple entry tables: animal characteristics (sex class) x meat (marbling or intramuscular fat) x juiciness evaluated by the consumer. Additionally, it was possible to describe the associations between variables such as ossification (age of the animals) x sex class x meat tenderness, as well as between fatness (carcass fat deposition score) x sex class x general satisfaction of consumers participating in the sensory test. Descriptions of the triple interactions between these factors through the application of the Tucker3 model can be used to evaluate and improve characteristics of economic importance to beef industry, producers and consumers.
