Com o objetivo de aumentar a vida útil e a qualidade do figo 'Roxo de Valinhos' após a colheita, foi pesquisado em duas fases de maturação do fruto e temperaturas de armazenamento, vários métodos de conservação, empregando atmosfera modificada e embalagens ativas. O experimento foi instalado no Instituto de Tecnologia de Alimentos, em Campinas (Estado de São Paulo). O delineamento experimental foi inteiramente casualizado, com quatro repetições, nas fases de maturação verde (padrão atual de exportação) e Rami (meio maduro) e nas condições de armazenamento: temperatura 25°C, com 70 ± 5% de umidade relativa e na temperatura de O°C, com 90 ± 5% de umidade relativa. Nestas fases e condições, os frutos foram submetidos aos seguintes tratamentos: PEBD (polietileno de baixa densidade ( 60 µ); PEBD+CH:polietileno de baixa densidade (60 µ) + sachê de hidróxido de cálcio (dessecante); Fresh Paper (absorvedor de gases); e Confresh (polietileno de baixa densidade de 35 µ, absorvedor de etileno). Os períodos de conservação na temperatura de 25°C foram de 2,4, 6,e 8 dias, enquanto que na temperatura de 0°C foi de 7, 13, 21 e 27 dias, mais 2 dias na câmara de transferência (temperatura de 25°C e 70 ± 5% de UR), para a evolução da maturação. No final de cada período, inclusive após a transferência, os frutos foram avaliados quanto as variáveis físicos, químicos e sensoriais: acidez total, pH, firmeza, sólidos solúveis, perda de peso, coloração da epiderme e da polpa, aparência, sabor e levantamento da ocorrência de podridões e de gel no interior da polpa. As embalagens Fresh Paper, PEBD, PEBD+CH e Confresh, tiveram efeito positivo em aumentar o tempo de conservação do figo 'Roxo de Valinhos', após a colheita, em ambos estágios de maturação, mesmo sem o emprego de refrigeração. O uso de embalagem com atmosfera modificada (PEBD, PEBD+CH e Confresh) diminuiu as perdas de rigidez e de peso dos frutos. A temperatura de 0°C favoreceu a conservação do figo após a colheita, porém tornou o fruto meio maduro suscetível a ocorrência de substância gelatinosa no interior da polpa.

Use of modified atmosphere and active packaging in the conservation of the ‘Roxo de Valinhos’ fig (Ficus carica L.)

With the objective of achieving better conservation and quality of the 'Roxo de Valinhos' fig, in post-harvest, different harvest stages and temperatures of storage, using modified atmospheres and active packaging methods, were studied. The experimental design was completely randomized, with four replications in the mature green and half-mature harvest stages, and in controlled storage conditions: temperature of 25°C, with relative humidity of 70 ± 5%, and temperature of 0°C with relative humidity of 90 ± 5%. In these maturity stages and storage conditions, the figs were submited to the following treatments: low density polyethylene (LDPE) film, (60 µ); low density polyethylene (LDPE) film 60µ + ca1cium hidroxide (desiccants) ; Fresh Paper (gases of absorbers ) and Confresh (35 µ polyetylene film, with ethylene absorbers). The fruits that kept under 25°C were stored for 2, 4, 6, and 8 days, while the fruit kept under 0°C, were stored for 7, 13, 21 and 27 days. The latter ones, after leaving the cold chamber, was kept , for 2 days, in the room temperature chamber (25°C and 70 ±, 5%), for further ripening. A the end of each period, including transferring, the physical and chemical variables of the fruit were evaluated: total acidity, pH, fineness, soluble solid, weight of loss, skin color, pulp color, appearance taste and the occurrence of rots and physiological anormalities. The use of Fresh Paper, low density polyethylene (LDPE) film 60 µ; low density polyethylene (LDPE) film 60 µ + calcium hidroxide ; and Confresh had a positive effect on the conservation of ‘Roxo de Valinhos1 fig, even without the use of low temperatures. The use of modified atmosphere minimizes the loss of fineness and weight of the fruit. The low temperatures improve post harvesting fruit conservation, but 0°C temperatures turn on the half-mature fig more susceptible to gel formation inside the pulp.
