A revisão de literatura mostra que existe ainda muita controvérsia a respeito da umidade ideal para a conservação de sementes de café. Assim, o objetivo do presente trabalho é determinar a influência do teor de umidade na longevidade de sementes de Coffea arabica L. cultivar Catuaí, linhagem H 2077-2-5-81 armazenadas em latas herméticamente fechadas. Logo após o despolpamento, a fermentação a a lavagem, as sementes foram submetidas a secagem à sombra. Para atingir teores de umidade menores que 14%, as sementes foram colocadas em secador com circulação forçada de ar quente, no qual tomou-se todo o cuidado para a temperatura não ultrapassar 40ºC. Para obtenção de lotes de sementes com diferentes teores de umidade foram retiradas porções de 5 litros de sementes desde o início até o final da secagem. As sementes foram depositadas, provisoriamente, em recipientes de vidro hermeticamente fechados para que se mantivesse inalterado o seu teor de umidade. Ao todo foram retiradas 12 amostras com os seguintes teores de umidade: 50,0%; 48,3%; 45,1%; 41,6%; 24,1%; 15,6%; 14,2%; 10,6%; 9,9%; 8,9%; 8,3%; e 7,8%. O conteúdo de cada vidro foi dividido em 5 partes aproximadamente iguais e cada uma dessas partes foi enlatada separadamente. As latas tinham capacidade de 1 (um) litro. As variações foram feitas através dos testes de germinação e vigor (primeira contagem do teste de germinação, crescimento de plântula e velocidade de emergência), em 5 épocas (julho, setembro, dezembro, fevereiro e abril). Para o presente trabalho as análises e a intepretação dos resultados permitem as seguintes conclusões: a. Para armazenamento de sementes de café em embalagens herméticas, é preciso que o seu teor de umidade esteja entre 8% e 10% e de preferência o mais próximo possível de 9%. b. A porcentagem de germinação e a primeira contagem do teste de germinação, tornam-se estatisticamente menores quando a secagem é conduzida a teores de umidade inferiores a 8%. c) Teor de umidade de 10,6% já é alto para as sementes armazenadas em ambientes herméticos, pois estas apresentam, ao fim de 11 meses, porcentagem de germinação, primeira contagem do teste de germinação e velocidade de emergência, inferiores às sementes armazenadas com teores entre 8% e 10%. d. Em embalagens hermeticamente fechadas, teores de umidade entre 24% e 50%, induzem as sementes de café a morte em tempo inferior a seis meses.

The literature reviewed showed that there is still lots of disagreement about the ideal humidity for the coffee seeds conservation. The object of the present work was todetermine the influence of humidity amount on the seeds longevity of Coffea arabica L. cultivar Catuaí, lineage H 2077-2-5-81 kept hermetically closed. Immediately after peeling, fermentation and washing, the seeds were dried under shadow. In order to reach humidity under 14% the seeds were dried in forced air circulation drier, with the temperature not going above 40ºC. Seed portions were taken out at different intervals since the begining to the end of the drying process to obtain seeds with different humidity amounts.The seeds were kept in closed glass containers in order to maintain their humidity amount. Finally 12 samples were kept with the following humidity amounts: 50.0%; 48.3%; 45.7%; 41.6%; 24.1%; 15.6%; 14.2%; 10.6%; 9.9%; 8.9%; 8.3% and 7.8%. The seed portions of each container were divided in equal parts and kept in separate cans of one liter capacity.The evaluations were made with germination, and vigour test (first counting of the germination test, seedling growing and coming up speed), at 5 differente periods (July, September, December, February and April). The following conclusions are set on the basis of the results: a. To keep coffee seeds in hermetical containers environment it its necessary to keep the humidity percentage between 8% to 10% preferably at 9%. b. The germination percentage and the first counting of the germination test were statistically lower when the drying was under 8%. c. The humidity amount (10.6%) is higher for the seeds kept in hermitical environment, because after eleven months they show the percentage of germination, first counting of the germination test and coming up speed lower than the seeds which were kept in humidity between 8% and 10%. d. Humidity amount between 24% and 50% in hermetical environment induces the death of the seeds earlier than 6 months.
