Este trabalho foi desenvolvido com o objetivo de comparar algumas linhagens de leveduras do gênero Saccharomyces, através de seus perfis proteicos. As semelhanças e as diferenças foram estudadas por meio da técnica de eletroforese em gel de poliacrilamida. Foram estudadas e comparadas 10 linhagens de leveduras, sendo cinco pertencentes as linhagens utilizadas na indústria alcooleira e cinco na indústria cervejeira. Estas fazem parte do estoque de linhagens do laboratório de microrganismos do Departamento de Genética da ESALQ/USP. A comparação foi feita através da análise de agrupamento das linhagens pelo método UPGMA, baseado no coeficiente de similaridade Simple Matching e Jaccard, resultando em um dendograma no qual visualiza-se a formação de três grupos distintos. Com relação a indústria alcooleira, a linhagem M304-2C foi a que mais diferiu entre elas, apresentando um valor de similaridade na faixa de 93%, enquanto as outras tiveram este valor estabelecido na faixa de 96%, para ambos índices de similaridade. Na indústria cervejeira, as linhagens A e B, e C e E foram divididas em dois grupos, respectivamente, bastante semelhantes entre si. A linhagem D apresentou um valor de similaridade de 70% para ambos índices de similaridade, formando, portanto, um grupo distinto. Com base nestes resultados, foi possível comparar as linhagens industriais através da sua constituição proteica avaliada por meio da SDS-PAGE.

Comparison industrial yeasts by protein electrophoresis
Abstract in English
This study aimed to compare some genus of yeast Saccharomyces by their proteic features. The differences and coincident patterns were resolved by poliacrylamide gel electrophoresis. Among 10 strains that were studied and compared 5 belong to the alcohol industry and 5 to the brewery industry. They carne from the Department of Genetics (ESALQ/USP) stocks. The comparison was carried out by the grouping analysis using the UPGMA method, based on Simple Matching and Jaccard's similarity coefficient, which resulted in dendrogram that shows three distinct groups. Related to the alcohol industry, the M304-2C strain show the most significant difference, with a similarity value of 93%, while the others showed values of 96%. The brewery industrial strains were divided in two distinct groups, as (A, B) and (C, E), with a lot of similarities themselves. The strain D show a similarity value of 70%, which ended up making a isolated group. Under these results it was possible to compare the industrial strains by their proteic constitution.
