A indústria brasileira produtora de etanol se utiliza, em sua maioria, do processo de Melle-Boinot, no qual se reutiliza, após centrifugação, a mesma levedura no próximo ciclo fermentativo. O presente trabalho visou basicamente estudar, em escala de laboratório, o efeito que os biocidas possam causar sobre o comportamento e levedura, e o rendimento da fermentação durante três ciclos fermentativos. Os experimentos foram conduzidos com a levedura prensada Fleischmann, com a linhagem M-300-A, também conhecida como TA-79 e com a linhagem IZ-1904, todas Saccharomyces cerevisiae e seis biocidas de uso comercial. Após cada ciclo foi retirado material para realizar a viabilidade, brotamento celular, e número de células por mililitros; do vinho delevurado foi efetuada a acidez fixa e o teor alcoólico para calcular o rendimento da fermentação. Os resultados indicam o seguinte: o biocida 2 não afeta as leveduras testadas; o rendimento da fermentação da levedura TA-79 e menor a 5% fermento e biocida 6; em concentrações maiores, as leveduras TA-79 e Fleischmann apresentaram um rendimento da fermentação superior, na maioria das vezes; não foi observado efeito cumulativo de biocidas durante os três ciclos; foi verificado, um melhor rendimento fermentativo quando houve um controle do brotamento pelo biocida; uma diminuição na viabilidade não afetou o rendimento; o rendimento da fermentação pela levedura IZ-1904 não foi afetado pelos biocidas

Effect of biocides on yeast performance and fermentation yield

Most of the Brazilian alcohol industry adopted the Melle-Boinot process, which reuses yeasts after centrifugation. The effect of biocides on yeast performance and fermentation yield was studied during three fermentation cycles in laboratory scale. The experiments were conducted using Fleischmann (S. cerevisiae) pressed yeast and strain M-300-A, also known as TA-79 (S. cerevisiae), as well as strain IZ-1904 (S. cerevisiae) and six commercial biocides. The number of cells/ml, cell viability and cell budding were determined after each cycle. Fermentation yield was calculated through the alcohol content of the must after yeast removal; infection was monitored through fixed acidity. Experimental results lead to the following main conclusions: biocide 2 did not affect yeasts performance; biocide 6 reduced fermentation yield when used with 5% of yeast TA-79; in most cases, higher concentrations of yeast TA-79 showed higher fermentation yields; there was no biocide cumulative effect through the three fermentation cycles; higher fermentation yields were obtained when biocide accomplished cell budding control; reductions of yeast viability did not affect fermentation yield; fermentation yield of yeast IZ-1904 was not affected by any of the biocides tested
