Este experimento foi realizado na Estação Experimental de Zootecnia de Pindamonhangaba (SP), com o objetivo de comparar os efeitos de diferentes tratamentos, constituídos por três, quatro e cinco quilos de leite, sobre o crescimento e a produção de carne de bezerros de raça leiteira, submetidos à desmama precoce. Foram utilizados 21 animais da raça holandesa malhada de preto, puros por cruzamento, não emasculados, com idade de 7 dias e com peso vivo médio de aproximadamente 33,86 kg. O delineamento estatístico foi de blocos ao acaso, com 3 tratamentos e 7 repetições. As variáveis de ganho de peso e consumo de feno também tiveram seus dados analisados por um delineamento em parcelas subdivididas, enquanto altura da cernelha, perímetro torácico e comprimento do corpo, somente por este último. O trabalho constou de 2 períodos, onde o de aleitamento de 28 dias foi seguido de um período pós-desmama de 209 dias, em média até os animais atingirem 160 kg de peso vivo. Os bezerros ficaram confinados durante todo o tempo, sendo o leite oferecido em duas porções diárias. O concentrado e o feno de gramínea tiveram sua ingestão controlada. As pesagens dos animais e as mensurações foram realizadas semanalmente. Para um consumo médio diário de 0,077 kg de concentrado e de 0,033 kg de feno de braquiária, os ganhos médios de peso por animal e por dia, no período de aleitamento, foram de: 0,178, 0,096 e 0,163 kg, respectivamente, para os tratamentos I, II e III. A conversão alimentar, calculada com base na ingestão individual de matéria seca do alimento, apresentou os seguintes resultados: 2,90, 3,28 e 3,67 correspondentes ao consumo totais de 0,481, 0,497 e 0,627 kg, na mesma ordem de tratamentos. No período pós-desmama para consumo médio diário de 2,087kg de concentrado e de 2,198 kg de feno, os ganhos de peso por animal e por dia foram os seguintes: 0,587, 0,611 e 0,598 kg, com uma conversão alimentar calculada à semelhança da citada anteriormente de: 6,48, 5,99 e 6,36, respectivamente para os tratamentos I, II e III. Os ganhos de peso médio por animal e por dia no período experimental total, para um consumo médio de 1,850 kg de concentrado e de 1,943 kg de feno, foram de: 0,537, 0,549 e 0,545 kg, com uma conversão alimentar de: 6,98, 6,63 e 7,14, respectivamente, para a mesma sequência de tratamentos. As mensurações efetuadas sobre os animais, referentes a altura da cernelha, perímetro torácico e comprimento do corpo, não indicaram efeitos significativos dos 3 tratamentos sobre o desenvolvimento dos animais, durante o período de observações. Para a avaliação das carcaças, doze animais, correspondentes a quatro blocos, foram sacrificados obtendo-se em média, o rendimento frio de 43,92%, o rendimento de carne igual a 71,60% e a retal habilidade da ordem de 53,58%.

The experiment was carried out at the ?Estação Experimental de Zootecnia do Instituto de Zootecnia em Pindamonhangaba?, State of São Paulo. The main objective of this experiment was to study the effects of three differents levels of milk: I = 3 kg; II = 4 kg; and III = 5 kg per calf per day, from 8 to 35 days of age, on the liveweight gain, feed conversion, and carcass characteristics at 160 kg of liveweight of bull calves of a dairy breed (Holstein). From 0 to 7 days of age the calves received <u>colostrum</u> (4 days) and milk at the rate of 1.0 kg of milk per 10 kg of livebody weight. From 8 to 35 days the animals were offered a concentrate mixture and a grass-hay <u>ad libitum</u>. From 36 days up to slaughtering weight the animals received grass hay <u>ad libitum</u> and the same concentrate mixture up to a maximum intake of 2.5 kg/animal/day. The average livebody weight of the bull calves used at 7 days of age was 33.9kg. A complete randomized block design with 3 treatments and 7 replicates per treatment was used as experimental design. The calves were maintained in individual stalls and received milk two times a day. The intakes of different feeds were measured daily. The animals were weighted and measured at weekly intervals and were slaughtered at an average livebody weight of 160 kg. The results, show that from 8 to 35 days of age, the average intake of concentrates and grass-hay for all treatments were 0.077 kg and 0.033 kg/animal/day. During this same period total dry matter intake, liveweight gain and feed conversion were: 0.481, 0.497 and 0.627 kg/animal/day; 0.178; 0.096 and 0.163 kg/animal/day; and 2.90, 3.28 and 3.67 kg of dry matter/kg of liveweight gain, respectively, for treatments I, II and III. From 36 days of age up to slaughtering, the average intakes of concentrate and grass-hay were 2.087 and 2.198 kg/animal/day, respectively. ln this last period, liveweight gain was 0.587, 0.611 and 0.598 kg/animal/day, and feed conversion was 6.48, 5.99 and 6.36 kg of dray matter/kg of liveweight gain, respectively, for treatments I, II and III. For the total period of the experiment, the liveweight gains were 0.537, 0.549 and 0.545 kg/animal/day and the feed conversions were 6.98, 6.63 and 7.14 kg of dray matter/kg of liveweight gain, respectively, for the same sequence of treatments. ln this period, the average intakes of concentrate and grass-hay were 1.850 and 1.943 kg/animal/day, respectively. The measurements made in the animal (wither height, thoracic perimeter and body length) were not affected by treatments. The carcass evaluation made in 4 animals/treatment showed the following results: 43.92% for cold carcass dressing percentage; 71.60% for beef yield; and 53.58% for cutability.
