O morango é uma fruta de grande importância comercial, sensorialmente apreciada e que fornece diversos nutrientes. Entretanto, sua vida útil é limitada devido a sua perecibilidade e susceptibilidade a doenças fúngicas, sendo o prolongamento de sua vida pós-colheita um desafio. Frente ao uso irregular de fungicidas não registrados na pós-colheita de morangos, óleos essenciais (OEs) de eucalipto têm conhecido poder antifúngico, podendo ser utilizados como alternativa para o controle de fungos na pós-colheita de morango. Entretanto, se aplicados diretamente na fruta, podem causar danos no fruto, assim a utilização da microencapsulação surge como uma alternativa para aumentar a estabilidade e controlar a liberação dos óleos essenciais. Dessa forma, este trabalho teve como objetivo desenvolver um produto microencapsulado com base em óleo essencial, que apresente capacidade de controlar o fungo Rhizopus stolonifer na vida pós-colheita de morango. Para isso, foram utilizados óleos essenciais de folhas de Eucalyptus staigeriana, Eucalyptus citriodora e Eucalyptus globulus e foi avaliada a microencapsulação como técnica de incorporação do óleo essencial. Inicialmente, verificou-se em teste in vitro, a capacidade antifúngica dos óleos essenciais livres de E. staigeriana, E. citriodora e E. globulus sobre o fungo R. stolonifer isolado de morangos. A seguir, foi avaliada a eficiência antifúngica das partículas contendo OEs em testes in vitro e in vivo, onde se selecionou a partícula que apresentou a melhor capacidade antifúngica. Então, os morangos submetidos ao tratamento com OEs microencapsulados foram avaliados quando as características físico-químicas (perda de massa, cor, ratio, pH, firmeza, degradação por fungos, compostos fenólicos e antocianinas) e sensoriais, durante o período de armazenamento de 18 dias em temperatura de refrigeração (5 ± 1°C). Como resultados, a composição química dos óleos essenciais de E. staigeriana, E. citriodora e E. globulus apresentaram limonene, citronellal e o 1,8-cineole como compostos majoritários, respectivamente. Foi possível afirmar que a combinação de goma arábica e óleos essenciais mostrou-se uma boa alternativa para a proteção dos OEs. Os OEs de E. staigeriana e E. citriodora e suas partículas apresentaram a maior capacidade de inibição de crescimento fúngico, uma vez que os OEs exibiram as menores CIM, para o ensaio in vitro. Durante o experimento de eficiência in vivo, os tratamentos OE livre e partícula de E. citriodora apresentaram a melhor ação antifúngica quando comparados com o OE. de E. staigeriana. No experimento pós-colheita, os morangos tratados com a partícula de E. citriodora apresentaram redução da degradação fúngica durante o armazenamento refrigerado, indicando conservação da sua qualidade. Já para os parâmetros físico-químicos (cor, firmeza, pH, ratio, antocianinas e compostos fenólicos), não houve alteração quando comparados aos demais tratamentos. No entanto, a avaliação sensorial evidenciou alteração da cor, aroma e aparência dos morangos tratados com OE livre e encapsulados. Dessa forma, o uso de OEs microencapsulados é uma alternativa potencial aos fungicidas sintéticos para o controle pós-colheita da podridão mole em morangos.

The strawberry is a fruit that has a huge commercial importance, sensory appreciate and provides many nutrients. However, the lifetime of the strawberry is limited due the perishability and susceptibility to fungal diseases, becoming a challenge to extend the postharvest life of it. Facing the irregular use of fungicides that doesn't have register at the postharvest of strawberrys, essential oils (EO) of eucalyptus is known for the antifungal power and can be used as alternative for the fungus control at the postharvest. However, if directly applied into the fruit, it can cause food damages. Therefore, the use of microencapsulation is an efficient method to increase the stability and also to control the release of the essential oils. For this reason, this dissertation has as objective the developing of a microencapsulated product based at the essential oil, that could be able to control the Rhizopus stolonifer fungus at the postharvest of the Strawberry. Therefore, essential oils were utilized, extracted from the leafs of Eucalyptus staigeriana, Eucalyptus citriodora and Eucalyptus globulus. The microencapsulation was evaluated as incorporation technique of the essential oil. Initially, it was verified through test in vitro, the antifungal capacity of the essential oils extracted (E. staigeriana, E. citriodora e E. globulus) into fungus R. stolonifer, isolated of the strawberries. After that, it was evaluated the antifungal efficiency of the particles through tests in vitro and in vivo, where was chosen which presented the best antifungal capacity. Therefore, strawberries submitted to treatment with microencapsulated EO were evaluated when physical-chemical characteristics (loss of mass, color, ratio, pH, firmness, degradation by fungi, phenolic compounds and anthocyanins) and sensorial characteristics were observed in fresh organic strawberries during the storage period of 18 days at refrigeration temperature (5 ± 1°C). As a result, the chemical composition of the essential oils of E. staigeriana, E. citriodora and E. globulus presented limonene, citronellal and 1,8-cineole as major compounds, respectively. It was possible to affirm that the combination of gum arabic and essential oils proved to be a good alternative for the protection of OEs. OEs of E. staigeriana and E. citriodora and their particles showed the greatest capacity for inhibition of fungal growth, since EO exhibited the smallest MICs for the in vitro assay. During the in vivo efficiency experiment, free EO and E. citriodora particle treatments showed the best antifungal action when compared to EO. From E. staigeriana. In the postharvest experiment, strawberries treated with the E. citriodora particle showed reduction of fungal degradation during refrigerated storage, indicating conservation of their quality. As for the physical-chemical parameters (color, firmness, pH, ratio, anthocyanins and phenolic compounds), there was no change when compared to the other treatments. However, the sensorial evaluation evidenced alteration of the color, aroma and appearance of strawberries treated with free and encapsulated EO. Thus, the use of microencapsulated EO is a potential alternative to synthetic fungicides for post-harvest control of soft rot in strawberries.
