O presente trabalho teve como objetivo encontrar métodos alternativos mais eficientes para o controle da atividade da polifenol oxidase (PFO) visando especialmente a substituição ou redução do nível de SO2 em frutas e hortaliças quando empregado para aquela finalidade. Com este propósito foi estudado o efeito de interações entre o emprego de compostos químicos (ácido ascórbico, ácido cítrico. EDTA e metabissulfito de sódio) e destes com o calor (70°C/2 minutos) no controle da atividade da PFO nas seguintes frutas e hortaliças em que o escurecimento enzímico constitui sério problema no processamento: abacate (Persea americana Mill.) var. Fortuna; banana (Musa cavendishi) var. Nanica; macã (Mallus sylvestris Mill.), variedades Ana, Fuji, Gala e Golden; pêra (Pyrus betulaefolia) , var. d'água; pêssego (Prunus pérsica cv. vulgaris), var. Real; batata (Solanum tuberosum L.), var. Bintje; berinjela (Solanum melongena L.), var. Super F100 ; cogumelo (Agaricus bisborus); palmito (Euterpe edulis Mart.) (Juçara). A PFO do abacate e berinjela foi mais resistente aos métodos de inibição empregados. De um modo geral a PFO proveniente das frutas apresentou maior resistência à inativação que a PFO das hortaliças. Tanto para a PFO de frutas, quanto para a de hortaliças o método de inativação enzímica menos eficaz foi a adição de ácido ascórbico e EDTA. O método mais eficaz incluiu a adição de ácido ascórbico, ácido cítrico metabissulfito de sódio e calor. Os resultados mostraram que o método alter- nativo mais adequado para substituir o SO2 na inativação da PFO das frutas (exceto abacate) e hortaliças foi o que empregou a combinação de ácido ascórbico (0,1%), ácido cítrico (0,2%) e calor (70 °C/2 minutos)

Investigations into the interaction effects of chemical compounds and heat treatment on polyphenol oxidase activity of some fruits and vegetables

The objective of this work was to study the effects of alternative methods on polyphenol oxidase (PPO) activity aiming to substitute or to reduce the level of SO2 when used to control the enzymic browning in fruits and vegetables. With this purpose the interaction effects of chemical compounds (ascorbic acid, citric acid, EDTA and sodium metabissulfite) and heat treatment (70°C/2 minutes) on PPO activity were studied in the following fruits and vegetables, in which the enzymic browning represents a great problem: avocado (Persea Americana Mill) var. Fortuna, banana (Musa cavendishi) var. Nanica, apple ( (Mallus sylvestris Mill.), var. Ana, Fuji, Gala and Golden, pear (Pyrus betulaefolia var. D’Água, peach (Prunus pérsica cv. vulgaris), var. Real, potato (Solanum tuberosum L.) var. Bintje, egg plant (Solanum melongena L.) var. Super F100, mushroom (Agaricus bisporus) and heart-of-palm (Euterpe edulis Mart.) (Juçara). The PPO of avocado and egg plant showed more resistance to inactivation than the other fruits and vegetables. In general fruits PPO showed more resistance to inactivation than the vegetables PPO. The less efficient method to inactivate the fruits and vegetables PPO was the adittion of ascorbic acid and EDTA. The most efficient method included the combination of ascorbic acid, citric acid, sodium metabissulfite and heat treatment. The results showed that the alternative method most suitable to substitute the use of SO2 to inactivate fruits (except avocado) and vegetables PPO was the one which employed the combination of ascorbic acid ( 0,1%) citric acid (0,2%) and heat treatment (70°C/minutes)
