No presente estudo comparou-se o efeito de várias técnicas de amaciamento sobre a maciez subjetiva e a força de cisalhamento do músculo Triceps brachii. Na primeira etapa, chamada de experimento 1, 22 músculos Triceps brachii obtidos de 11 bovinos fêmeas com idade de 24 meses, abatidos em abatedouro experimental, foram submetidos à tenderização mecânica, à injeção de ácido acético 0,1M e ácido lático 0,2M, à maturação por 9 e 14 dias, à estimulação elétrica (250V-60Hz-90s), sendo alguns reservados como grupo controle, sem tratamento. Nesta etapa, a carne maturada por 14 dias apresentou 21% de aumento na maciez subjetiva e 12% de diminuição da força de cisalhamento, este valores são semelhantes aos da estimulação elétrica. Contudo a injeção com ácidos e a maturação por 9 dias não apresentou efeito significativo sobre a textura da carne tratada. Embora o valor da força de cisalhamento da carne tenderizada mecanicamente tenha sido o menor entre todos os tratamentos, supeita-se da superstimação devido ao plano de fraturas criadas por tal processo. Na segunda etapa, chamada de experimento 2, foram abatidos 25 bovinos machos da raça Nelore com idade de 24 meses, em abatedouro comercial, para obtenção de 30 músculos Triceps brachii. Das 30 unidades experimentais a) 5 foram descartadas por apresentar pH de 24 horas maior que 6,0 e portanto, serem consideradas carne DFD as quais apresentam características indesejáveis para cor, suculência e textura; b) 6 foram congeladas como grupo controle e c) 19 restantes foram submetidas aos seguintes tratamentos; maturação por 14 dias e por 21 dias; injeção de ácido acético 0,1M e 0,2M; injeção de ácido lático 0,2M e 0,3M. Para os valores de força e cisalhamento os tratamentos que apresentaram melhora significativa, foram: a carne maturada por 14 e 21 dias injeção com ácido lático 0,2M com 46,6%, 39,0% e 24,2% de diminuição na força de cisalhamento. A análise sensorial também apontou a carne maturada por 14 dias, a carne tratada com ácido acético 0,1M e a carne maturada por 21 dias, como os melhores resultados para maciez, com 31,0%, 22,3% e 20,1% de aumento na maciez. Para os outros tratamentos não houve diferença estatística significativa para força de cisalhamento e a análise sensorial quando comparados ao grupo controle. Durante as duas etapas do trabalho foram realizadas outras análises como: monitoramento da curva de pH e de valor R; análises de cor; perda de peso por cozimento e devido aos tratamentos; além de análises microbiológicas

The effects of various methods of tenderizing on tenderness and shear force of the Triceps brachii muscle were compared. The work was divided into two sections. ln the first section (experiment 1), 22 Triceps brachiimuscles obtained from 11 cows of 3 to 4 years of age, slaughtered at an experimental slaughtering plant, were submitted to mechanical tenderization, injection of 0.1M acetic acid and 0.2M lactic acid, ageing for 9 and 14 days, and electrical stimulation (250v - 60Hz - 90s); some muscles were set apart as a control group, without treatment. ln this section, the 14 - day aged meat showed an increase of 21% in subjective tenderness and a 12% decrease in shear force; these values were similar to those of the electrical stimulated meat. However, the injection of acids and ageing for 9 days did not show significant effect on the texture. Although the value of mechanical tenderized meat shear force was the lowest among all treatments, one may suspect of superestimation because of the fractures plan created by this process. ln the second section (experiment 2), 25 male Nelore (Bos indicus) of 24 mouths of age, were slaughtered at a commercial slaughtering plant to obtain 30 Triceps brachii muscles. From 30 experimental units, a) 5 were neglected because the post mortem pH was over than 6.0 and they were, therefore, considered as DFD meat with undesirable characteristics for colour, swell and texture; b) 6 were frozen as a control group, and c) the remaining 19 were submitted to ageing for 14 and 21 days, injection of 0.1M and 0.2M acetic acid, and injection of 0.2M and 0.3M lactic acid. The meat aged for 14 and 21 days and the 0.2M lactic acid - inject meat had a significant decrease in shear force, with 46.6%, 39.0% and 24.2% of reduction. The sensorial analyses also pointed best results in tenderness for the 14 - day aged meat, the 0.1M acetic acid - injected meat, and the 21-day aged meat, with 31.0%, 22.3% and 20.1% of tenderness increase. The other treatments did not show significant differences in shear force values and sensorial analyses im comparison with the control group. Along both experiments, the monitoration of the pH curve and R value, colour analyses, analyses weight loss by cooking and treatments, and microbiological analyses were also performed.
