Avaliou-se os efeitos da pasteurização e congelamento, das estações do ano e das regiões do Estado de Pernambuco, nos parâmetros físicos e químicos do leite de cabra. Analisou- se a densidade, a acidez, as porcentagens de gordura, de extrato seco total (EST) e desengordurado (ESD), de proteína total, nitrogênio total (NT) e nitrogênio não proteico (NNP) e os ácidos graxos de C4 a C18:2. Utilizou-se o método de Dornic para a determinação da acidez, a porcentagem de gordura foi determinada pelo método de Gerber e o método de Kjeldahl nas análises das frações nitrogenadas. Os ácidos graxos foram analisados por cromatografia em fase gasosa e a porcentagem dos mesmos calculada pelo método de Normalização de Área dos picos obtidos nos cromatogramas com Fator de Resposta. O experimento foi conduzido através de um delineamento inteiramente casualizado, em esquema fatorial ao nível de 5% de probabilidade, com 9 repetições. A pasteurização e o congelamento provocaram diminuição dos teores de ácidos graxos saturados e interferiu na porcentagem de gordura porcentagem de gordura variou com as estações do ano, bem como as porcentagens de EST, NT e proteínas. Os teores de gordura, EST, ESD e NNP, variaram entre as regiões. Os ácidos graxos encontrados e m menores proporções foram o capróico, linoleico, butírico, caprílico e o esteárico. Todos os leites analisados apresentaram maiores teores de ácido palmítico.

Physicochemical characteristics of goat-milk under the effects of thermal treatments and seasons in two regions of Pernambuco state

The effects of pasteurization and freezing, seasons, and regions of Pernambuco State were evaluated above the physicochemical parameters of the goat-milk. The analysis included density, acidity, percentage of fat, total solids (TS) and solids nonfat (SNF), the contents of crude protein, total nitrogen (TN), non protein nitrogen (NPN) and also fatty acids from C4 a C18:2. It was utilized the Dornic’s method for acidity determination. The percentage of fat was determined using the Gerber's method and the Kjeldahl’s method for the nitrogen fractions analysis. The fatty acids were analysed by gas chromatography and the percentage of them calculated by the method of "area normalization" with response factor to the peaks obtained in the chromatograms. The statistic analysis involved a randomized design in a factorial scheme (P< 0.05), with 9 replications. The pasteurization and freezing procedures promoted reduction of the content of saturated fatty acids and also affected the percentage of fat. The percentage of fat varied according to year seasons, as well as the percentage of TS, TN and proteins. The contents of fat, ST, SNF and NPN varied between regions. The fatty acids found in minor proportion were the caproic, linoleic, butyric, caprilic and stearic. The samples analysed showed high contents of palmitic acid.
