Historicamente, a produção do açúcar cristal, de consumo direto, no Brasil, envolve a sulfitação do caldo de cana, através de seu contato com o SO2 gasoso produzido à partir da queima do enxofre elementar na própria unidade industrial. Apesar de ser um processo simples e econômico, ele se revela de baixa tecnologia. Assim sendo, tendo em vista acumular informações sobre a utilização do ácido sulfuroso (H2SO3), que sem dúvida, melhoria o nível técnico desta fasem industrial, se propôs a realizar estudos visando inicialmente, comparar a eficiência do SO2 gasoso, com a utilização do H2SO3 e analisar a reatividade do ácido sulfuroso quando adicionado ao caldo de cana. O trabalho foi realizado na safra 1992/93, na usina Cresciumal, Estado de São Paulo e constou da sulfitação do caldo misto com H2SO3 até pH 4,0 ± 0,1reproduzindo-se em laboratório as fases do processo da usina. O trabalho permitiu concluir que: a) A sulfitação com H2SO3, produziu um caldo clarificado de maior pureza e um menor volume de lodo; b) O consumo de H2SO3 é maior que o do enxofre elementar em termos de SO2; c) O maior consumo do ácido e a falta de demanda do produto, para esse fim, tornam o seu preço elevado, inviabilizando atualmente o seu uso, o que não quer dizer que o processo não se torne viável no futuro.

The sulfurous acid in the mixed juice sulfitation of the sugar Mill
Abstract in English
The history of the sugar production for direct consumption in Brazil involves the cane juice sulfitation process through the contact with SO2 gas released from elementary sulfur, take place in industrial unit itself. Although being simple and still economic one it is considered a low techonology process. Considering that, the adoption of the sulfurous acid (H2SO3), would be a evolution in the techonology leveI, being the aim of this work to accumulate information about its use. The efficiency of the conventional and the one with the H2SO3 process will be compared. The H2SO3 reactivity, added to the juice, will be analyzed. The work was dane during the 1992/1993 harvest season, in the Cresciumal sugar mill, São Paulo State, Brazil. The mixed juice sulfitation step of the sugar mills wich H2SO3, up to pH 4,0 ± 0,1 was reproduced in laboratory. The results allowed to conclude that: a) The sulfitation with H2SO3 system produced a higher purity clarified juice with lesser mud; b) The H2SO3 is higher then the SO2 in consumption terms; c) The high consumption and the low acid request for this specific aim turn its price high, and the process in the economic point of view impractical. It does not in the future would not be an economic system.
