O presente trabalho visou basicamente estudar a influência da temperatura de fermentação e a reciclagem de células (Saccharomyces cerevisiae) em fermentação alcoólica de mosto de melaço de cana de açúcar em batelada alimentada, sendo que em todos os ensaios foi utilizada uma razão de alimentação constante de 500 ml/15 minutos, durante 5 horas. Para tanto foi utilizado um fermentador com capacidade para 15 litros e realizados os seguintes ensaios: fermentação conduzida à temperatura de 30°C e 1500 g de massa úmida de fermento inicial; fermentação conduzida à temperatura de 25°C e 1500 g de massa úmida de fermento inicial e ferementação conduzaida a 30°C e 750 g de massa úmida de fermento inóculo. Foram analisados os teores de etanol repetir, açúcares redutores totais, massa celular, de hora em hora, até a fermentação ser considerada terminada, sendo analisados os diversos comportamentos dos experimentos. Foi constatado que as técnicas de determinação de massa celular utilizadas nos ensaios com reciclos não foram adequadas (turbidimetria e centrifugação). Ambas as técnicas sorem influcências diversas do meio que acabam por interferir nos resultados, principalmente de estudos cinéticos de fermentação, como as velocidades de consumo de açúcar e formação de produtos. Constatou-se também que tanto a produção de etanol, como o consumo de açúcar no período de enchimento do fermentador, apresentaram um elevado coeficiente de correlação (r de 0,9212 a 1,0000) da correlação linear entre as massas citadas e o tempo. Na temperatura de 25°C a eficiência fermentativa média foi de (90%) contra (84%) das fermentações realizadas à 30°C, no entanto as fermentações realizadas a 25°C possuíam uma menor produtividade (7,15 g de etanol/l*h) contra (7,87 g de etanol/l*h) das fermentações realizadas em termperatura de 30°C.

Influence of two temperature levels and, cell recycling in alcoholic fermentation

The present work was carried out basically to study the influence of fermentation temperature and the cell recycling alcoholic fermentation of sugar cane molasses worts in feed batch with all assays using a constant feeding ratio of 500 m/15 minutes, for 5 hours. Tree assays were carried out in a reactor of 15 liter capacity at three diferent conditions, using 10 liter of sugar cane worts and pressed yeast as inoculum. 1. Fermentation conducted at 30.0°C using 1,500 g of yeast. 2. Fermentation conducted at 25.0°C and 1,500 g of yeast. 3. Fermentation conducted at 30.0°C and 750 g of yeast. To follow the fermentation performance, total ethanol, total reducing contents and dry matter wheight were analized hourly up to the end of fermentation. The statistics analyses of the results showed a very good correlation between the alcohool production and time of reactor feeding and also between sugar consuption and time of reactor feeding (r = 0.9212 to 1.0000). At 25.0°C the average of yield fermentation was 90% whereas at 30.0°C it was 84%. However the fermentation conducted at 25.0°C showed a lower productivity, that is, 7.15 g ethanol/hr than that at 30.0°C, which was of 7.87 ethanol/hr.
