Foi investigado a correlação entre a contagem total de microrganismos aeróbios por plaqueamento em PCA e o sistema Petrifilm; correlação entre o teste de redutase e a contagem total pelas duas metodologias. Investigou-se também a relação entre o teste de redutase e a contagem de coliformes totais por plaqueamento em VRBA e sistema Petrifilm, em meio seletivo para estes microrganismos. A análise estatística dos resultados, mostrou uma forte correlação entre contagem total de microrganismo por PCA e o sistema Petrifilm e, também entre o teste de redutase e a contagem total de microrganismo em PCA e o no sistema Petrifilm. Para coliformes totais, a correlação entre a contagem em VRBA e no sistema Petrifilm foi significativa, mostrando uma estreita equivalência entre ambas as metodologias. Por outro lado, as correlações entre os teste de redutase e a contagem de coliformes totais por VRBA e pelo sistema Petrifilm foi menos significativa. Levando em consideração as correlações encontradas entre estas metodologias, para a contagem total de microrganismos aeróbios, contagem de coliformes totais e o teste de redutase e, que o sistema Petrifilm é um procedimento rápido e fácil, reduzindo mão de obra, pode-se assegurar que este sistema pode substituir os métodos convencionais para o controle microbiológico nas indústrias de leite e derivados

It was investigated the correlation among the total counting of aerobic microorganisms by plating in Plate Count Agar (P. C .A.) and Petrifilm system, and also the correlation of reductase test and total counting by both methodologies. It was also investigated the relationship among reductase test and total coliforms counting in Violet Red Bile Agar (VRBA) and Petrifilm system. A total of sixty four samples were analysed. The statistical analysis of the results showed a strong correlation among total microorganisms counting by P.C.A. and Petrifilm system, and also between reductase test and both, total microorganisms counting (P . C .A.) and Petrifilm system, demonstrating a very good equivalence among these methodologies. For total coliforms, the correlation between VRBA counting and Petrifilm system, was significative, showing a narrow equivalence of both methodologies. On the other hand, the correlations among reductase test and total coliforms counting by VRBA and Petrifilm system were less significative. Talking into account the correlations fownd among these methodologies, for total aerobic microorganisms counting, total coliforms counting and reductase test, and considering that Petrifilm system is a fast procedure, saving labor, one can say that this system may be a substitute for the conventional procedures for the microbiologycal control in dary plants
