Este trabalho foi realizado para detectar a ocorrência de Staphilococcus aureus em leite cru, leite pasteurizado tipo C e queijo "Minas Frescal", comercializados em Piracicaba, bem como detectar a capacidade enterotoxigênica de linhagens isoladas destes produtos. S. aureus foi isolado plaqueando-se amostras de leite e queijo em meio ágar Baird-parker. Colônias típicas foram submetidas a testes bioquímicos para identificação. Os resultados deste estudo mostraram que de 56 amostras de produtos lácteos examinadas 15 (26,32%) apresentaram-se contaminadas por S. aureus. Em relação ao leite cru, observou-se que das 19 amostras analisadas 11 (57,89%) estavam contaminadas por S. aureus, sendo que as contagens variaram de 1,20.103 7,40.105 UFC/ml, com média de 7,75.104 UFC/ml. S. aureus não esteve presente em nenhuma das 19 amostras de leite pasteurizado tipo C examinadas. Quanto ao queijo "Minas Frescal os resultados mostraram que S. aureus esteve presente em 4 (22,22%) das 18 amostras analisadas e as contagens variaram de 4,70.104 1,38.106 UFC/g, com média de 4,32.103 UFC/g. Nenhuma das 23 linhagens isoladas e identificadas como S. aureus, "Minas Frescal ", produziram a partir de leite cru e queijo quaisquer das enterotoxinas analisadas, ou seja, dos tipos A, B, C2 e D. Tanto amostras de queijo “Minas Frescal” quanto de leite cru apresentaram contagens em níveis capazes de produzir enterotoxinas estafilocócicas detectáveis em alimentos, constituindo risco potencial à saúde pública. Todas as amostras de queijo "Minas Frescal"contaminadas por S. aureus apresentaram-se fora dos padrões microbiológicos legais brasileiros, indicando que elas são impróprias para o consumo humano e, portanto, deve ser exercido um maior controle, para se evitar a comercialização e o consumo deste produto.

Occurrence of Staphylococcus aureus and enterotoxins production by isolated strains from raw milk, pasteurized milk type C and “Minas frescal”, cheese commercialized in Piracicaba - SP

This work was undertaken to detect the S. aureus occurrence in raw milk pasteurized milk type C and "Minas Frescal” cheese marketed in Piracicaba, as well as to detect the enterotoxigenic capacity of the isolated strains from these products. S. aureus were isolated by plating milk and cheese samples on Baird-Parker Ágar medium. Typical colonies were submited to biochemical tests for identification. The results of this work pointed out that from 56 samples of milk and dairy products examined, 15 (26 1 32%) presented contamined by S. aureus. For raw milk, from the 19 samples analised 11(57,89%) were contaminated by S. aureus where the counts ranged from 1,20.103 - 7,40.105 c.f.u./ml with an average of 7,75.104 c.f.u./ml . S. aureus wasn’t present in any of the 19 pasteurized milk type C samples examined. For "Minas Frescal” cheese the results pointed out that the S. aureus was present in 4(22,22%) out of the 18 samples analised and the counts ranged from 4,70.103 1,38.103 c.f.u./g with an average of 4,32.105 c.f.u./g. No one of all 23 strains isolated and identified as S. aureus from raw milk and "Minas Frescal” cheese produced any of the A, B, C2 and D enterotoxins types analised. Both "Minas Frescal" cheese and raw milk showed counts at leveIs able to produce detectable staphylococcal enterotoxin ln foods j so being potential risk to public health. All "Minas Frescal" cheese samples contamined by S. aureus were out of the legal brasilian microbiological standards, indicating that they are unappropriate for human consumption, so, a better control must be exercised to avoid the consumption and marketing of this product.
