O presente trabalho teve como objetivo a montagem de um aparelho para tratamento térmico de esporos, que instalasse uma atividade de água no ar, a ser utilizado como meio de aquecimento. O tratamento térmico segue o princípio de aquecimento e resfriamento instantâneo. Outro objetivo foi estudar a resistência térmica de conidiósporos de <i>Aspergillus parasiticus</i> 403, produtor de aflatoxina B<sub>1</sub> e G<sub>1</sub>, em ar superaquecido. O equipamento é constituído basicamente de um saturador, um umidificador, um termostato, uma secção tubular de aquecimento e uma câmara de tratamento. O tempo de aquecimento da lâmina de alumínio de 10 x 15 x 0,02 mm, nas temperaturas de 50, 60, 70, 80, 90, 100, 105, 110, 115 e 120°C não ultrapassava 3,2 segundos, sendo que nas temperaturas testadas, as atividades de água no ar superaquecido foram 0,270; 0,160; 0,105; 0,068; 0,046; 0,032; 0,027; 0,024; 0,019 e 0,017, respectivamente. O tempo de resfriamento pós-tratamento, nas temperaturas testadas não ultrapassou 2,2 segundos, incluindo-se o tempo de transferência da amostra. Para o estudo da resistência térmica de <i>A. parasiticus</i> 403, os conidiósporos estocados em suspensão aquosa acerca de 5°C, antes de serem submetidas aos tratamentos térmicos, eram pipetados nas lâminas de alumínio e secas a vácuo, sendo pré-condicionados por 48 horas em ambiente de aw = 0,75. Após o tratamento, a contagem dos conidiósporos viáveis, foi feita em meio CZAPECK. O cálculo de ?D? foi feito através da fórmula D = (Descrito na Dissertação) e retas de quadrados mínimos. Os valores ?D? encontrados foram 24 mm a 100°C e aw = 0,032; 22,5 min a 105°C e aw = 0,027; 11,5 min a 110°C e aw = 0,024, 9,0 min a 115°C e aw = 0,019. O uso da formula D = (Descrito na Dissertação) é limitado, não permitindo a constatação de fenômenos de ativação e inativação simultâneos, ou a eventual presença de frações de resistência media diferentes. Nas temperaturas de 105°C, 110°C e 115°C, os conidiósporos de <i>A. parasiticus</i> 403 apresentaram duas frações de resistências medias diferentes. O valor Z = 32°C C calculado para o microrganismo em estudo, tem um valor relativo, podendo ser válido apenas em espaço muito limitado de temperatura.

The present study had the objective of setting an equipment for heat treatment of spores, which installed a water activity in the air to be used as the heating medium. The heat treatment follows the principle of instantaneous heating and cooling. The other objective was to study the heat resistance of the conidiophores of the <i>Aspergillus parasiticus</i> 403, producer of the aflatoxins B<sub>1</sub>G<sub>1</sub> in superheated air. The equipment is basicaly constituted of a saturator, a humidifier, a thermostat, a tubular section for heating of the air and a chamber for the heat treatment of the spores. The time of heating of the aluminum plate of 10 x 15 x 0,02 mm, in the temperatures of 50; 60; 70; 80; 90; 100; 105; 110; 115 and 120°C did not pass 3,2 seconds, the water activities in the superheated air for the temperatures mentioned above, were 0.270; 0.160; 0.105; 0.068; 0.046; 0.032; 0.027; 0.024; 0.019 and 0.017, respectively. The time of cooling after treatment, in the tested temperatures did not pass 2,2 seconds, inducing the time of samples transferring. To the study of heat resistance of <i>A. parasiticus</i> 403, the conidiophores stored in water suspension at about 5°C, before being submitted to heat treatment, were a transferred to the aluminum plate by means of a pipet and vacuum dried, being pre-conditioned, for 48 hours in environment of water activity 0.75. After the treatment the counting of the viable conidiophores were made in CZAPECK medium. The D value was calculated throught the formula D = (See Dissertation) and linear regression. The found values for D were 24 min at 100°C and aw = 0.032; 22.5 min at 105°C, and aw = 0.027; 11.5 min at 110°C and aw = 0.024; 9.0 min at 115°C and aw = 0.019. The use of the formula D = (See Dissertation) is limited, not permitting the constantion of phenomena simultaneous of activation and inactivation, or of eventual presence of fraction of different average resistances. At the temperatures of 105°C, 110°C and 115°C, the conidiophores of <i>A. parasiticus</i> 403 presented two fractions of different average resistances. The Z value 32°C calculated to the microorganism in study, has a relative value, that can be valid only in a very limited space of temperature.
