O polvilho azedo é elaborado através de tecnologia artesanal, que gera um produto desuniforme e de difícil padronização. Como produto tradicional, é produzido nos Estados de Minas Gerais, Paraná e Santa Catarina e comercializado no Brasil todo. Como a produção de pão de queijo e biscoito de polvilho tem ganho interesse por parte dos industriais, razão pela qual tem-se exigido do produto padrões de qualidade em nível nacional. A legislação brasileira não acompanhou estas mudanças. Datando de 1978, a última regulamentação traz limites irreais para o produto comercial, estabelecidos sem base técnica. Por este motivo o presente estudo teve como finalidade propor uma classificação em nível nacional para o polvilho azedo. Baseado nas análises físico-químicas e de qualidade de 52 amostras de polvilho azedo das safras de mandioca de 1996 das principais regiões produtoras. De acordo com os resultados obtidos 58% das amostras de polvilho azedo excederam o valor de 14% de umidade estabelecido pela legislação e 52% das amostras excederam o valor máximo de acidez titulável permitido pela legislação de 5,00 ml de NaOH N/100g de amostra. Esses teores elevados de umidade e acidez não afetaram a qualidade do produto final ou seu armazenamento, conforme os resultados de análises de qualidade de expansão ao forno e atividade de água. Em relação a quantidade de cinzas 98% das amostras apresentaram valores menores que o estabelecido pela legislação de 0,5%. Os resultados de colorimetria apontaram dominância do amarelo e do vermelho nas amostras de polvilho azedo. Entre os ácidos orgânicos o ácido láctico esteve presente em maior quantidade (0,42 g/100g), seguido dos ácidos butírico (0,06 g/100g) e acético (0,02 g/100g). Nas amostras do Estado de Santa Catarina foi detectado maior número de sujidades e nas do Estado de Minas Gerais maior quantidade de material areno-terroso. Enfatiza-se que 100% das amostras de polvilho azedo apresentaram valor médio de 0,57 de atividade de água, o que impede o desenvolvimento de grande parte dos microrganismos, garantindo a vida de prateleira por período prolongado. Ao considerar os resultados obtidos de expansão ao forno e o universo das amostras estudadas, foi possível propor uma classificação em nível nacional em três tipos A, B e C. Onde o tipo A (10%) abrange os polvilhos de qualidade extra, o tipo B (80%) os polvilhos de média qualidade e o tipo C (10%) de qualidade inferior. A classificação proposta implica em alterar alguns dos limites estabelecidos pela legislação em vigência. A maior parte das amostras ultrapassa o limite estabelecido, é o caso da acidez que caracteriza o produto como ácido, o que não prejudica a qualidade. Outro aspecto que deve ser considerado é a atividade de água, que estabelece se o produto comercializado está apto ou não a manter suas qualidades iniciais durante o armazenamento e comercialização a longo prazo. Por outro lado sugere-se a inclusão da expansão como análise para avaliar a qualidade do polvilho azedo.

Propose of classification to the fermented cassava starch

The fermented cassava starch is made through artistic technique, which generates a desuniformed product of difficult pattern. As a traditional product, it is produced in the states of Minas Gerais, Paraná and Santa Catarina and traded all over Brazil. Since the cheese bread and the fermented cassava starch biscuits production has become interesting for the businesspeople, it has been required from the products, national standards of quality. However, the Brazilian legislation did not follow those quality changes. The last regulation, which brings irreal limits to the product and was established without any technical basis, dates back to 1978. Thus, the aim of the present study is to propose a national level classification to the fermented cassava starch, based on the physical-chemical and quality analysis of 52 fermented cassava starch samples of the 1996 cassava harvest from the main production regions. According to the obtained results, 58% of the fermented cassava starch samples exceeded the 14% de humidity value established in the legislation and 52% of the samples exceeded the maximum acidity value allowed by the legislation of the 5 ml de NaOH N/100g of sample. These contents high-graded by humidity and acidity did not affect the quality on the final product nor its storing, according to the results of expansion quality analysis on the oven and water activity. ln relation to the ash quantity, 98% of samples presented values lower than the of 0.5% established by the legislation. The results of colorimetric pointed out dominance of yellow and red on the fermented cassava starch samples. Among the organic acids, the lactic acid was in higher quantity (0.42 g/100g), followed by the butiric (0.06 g/100g) and acetic (0.02 g/100g) acids. The samples from the Santa Catarina state presented higher quantities of the filth; except for the material sandy-carthy which was found in higher quantity on the samples from the Minas Gerais state. It is emphasized that 100% of the fermented cassava starch samples presented an average value of 0.57 of water activity, which impedes the development of great part of microrganisms, guaranteeing shelf life for a long period. When considering the obtained results of oven expansion and the universe of the studied samples, it was possible to propose a antional level classification of three types: A, B and C, in which the type A (10%) includes the high quality fermented cassava starch, type B those of medium quality and the type C those of inferior quality. The proposed classification implies that some of the established limits by the legislation in force are altered. Most of the samples surpassed the established limit; in the case of the acidity that characterizes the product as acid, that does not damage the quality. Another aspect that should be considered is the water activity, which establishes whether the trading product is able or not to maintain its prime qualities during the long term storing and trading. On the other hand, it is suggested that the expansion as analysis to evaluate the quality of the fermented cassava starch is included.
