O presente trabalho objetivou buscar informações sobre a ocorrência das antocianinas em variedades de uvas tintas cultivadas no Brasil, colhidas em vinhedos industriais, na região vitivinícola de Bento Gonçalves, Rio Grande do Sul, durante a vindima de 1979. As variedades foram reunidas em grupos, assim distribuídas: Variedades viníferas: Bonarda, Merlot, Barbera D'Asti , Gamay Beaujolais , Cabernet Franc ; Canaiolo e Pinot Noir Variedades americanas: Isabel, Concord, Bordô e Herbemont Variedades híbridas: Seibel 2, Seibel 10096 e Seibel 5455 Das amostras destas variedades foram obtidos dois mostos. Um, para as determinações de Brix e acidez total, e outro, para o preparo dos extratos utilizados na separação cromatográfica e identificação das antocianinas. A separação foi efetuada por cromatografia em camada delgada, unidimensional, em placas de 20 x 20 cm. Após o desenvolvimento dos cromatogramas verificou-se o aparecimento das bandas relativas às antocianinas 3-monoglicosideo e 3,5-diglicosideo, identificadas sob luz ultravioleta, (365 nm) e eluidas da placa para a determinação quantitativa por espectrofotometria a 520 nm. Os resultados foram expressos, respectivamente, em malvidina-3-monoglicosideo (mg/l) e malvidina-3,5-diglicosideo (mg/l). As variedades viníferas não apresentaram anto- cianinas 3,5-diglicosideo, comprovando, portanto, serem pertencentes ã espécie Vitis vinífera. Nas americanas e hibridas, verificou-se a presença das antocianinas 3-monoglicosideo e 3,5-digliocosideo. Esses resultados confirmam que a espécie Vitis vinífera possui, como característica, somente antocianinas 3-monoglicosideo, e que o caráter diglicosídeo das demais espécies do gênero Vitis e transmitido aos híbridos nos cruzamentos destas com Vitis vinífera. O conhecimento da composição das diferentes variedades de uvas em antocianinas, permite a detecção de fraudes em vinhos de variedades viníferas, quando da mistura das mesmas com variedades não viníferas.

The objective of the present work was to gather informations on the occurence of anthocyanins in varieties of red grapes grown in Brazil, harvested in Bento Gonçalves, Rio Grande do Sul, during the 1979s vintage: The different grape varieties were distributed in groups, as follow: Vinifera varieties: Bonarda ; Merlot ; Barbera DAsti ; Gamay Beaujolais ; Cabernet Franc ; Canaiolo and Pinot Noir American varieties: Isabel; Concord Bordô and Herbemont Hybrid varieties: Seibel 2; Seibel 10096 and Seibel 5455 From each of these varieties two different musts were obtained. One were used for Brix and total acidi ty determinations, and the other for the extract preparation to be used for chromatographic separation and identification of the anthocyanins. The separation was performed by thin-layer monodimensional chromatography, in 20 x 20 cm plates. After the chromatograms development, bands relative to the anthocyanins 3-monoglicoside and 3,5-diglicoside were identified under U. V. light (365 nm), and then removed from the plates and eluted for quantitative determination by spectrophotometry at 520 nm. Results were expressed as malvidine-3-monoglicoside (mg/1) and malvidine-3,5-diglicoside (mg/l). The Vinifera varieties did not present 3,5-diglicoside, which confirm its identification as Vitis vinífera. The American and Hybrid varieties showed presence of 3-monoglicoside and 3,5-diglicoside anthocyanins. These results indicate that the species Vitis vinífera has, as characteristic, only 3- monoglicoside anthocyanins, while the dig1icoside character of the other species of the genus Vitis is transmited to the hybrids obtained by breeding them with Vitis vinífera. Knowledge of the antocyanins content in gra- pes of different varieties may help in the detection of wine adulteration.
