O tomate é uma das principais olerícolas produzidas no Brasil e nos EUA. A colheita de frutos verdes, como é feita na Flórida, EUA, garante um longo período de vida pós-colheita, por outro lado, resulta em frutos maduros de baixa qualidade. No Brasil a colheita é feita quando os frutos já apresentam mais de 30% da superfície vermelha o que resulta num produto de curta vida pós-colheita. Um esquema que possa unir a longa vida pós-colheita com a boa qualidade final do fruto seria o ideal. O armazenamento sob atmosfera controlada, juntamente com a refrigeração, é um dos processos que tem sido muito utilizados para atrasar o amadurecimento e retardar a senescência de frutas e olerícolas. Neste trabalho procurou-se estudar os efeitos do uso da atmosfera controlada na qualidade final do tomate. Para isso, tomates (cv. Agriset) foram colhidos no estádio 2 de maturidade (menos de 10% de cor vermelha) e armazenados em um sistema de fluxo contínuo a 12C sob diferentes atmosferas (2% O2, 3% O2, 4% O2, 2% CO2, 4% CO2, 7% CO2 e ar) por dois períodos de tempo distintos, 7 e 14 dias. Após o armazenamento os frutos foram transferidos para uma câmara de amadurecimento (20C) e quando se encontravam totalmente maduros - começaram a perder a firmeza - foram avaliadas a perda de peso e firmeza, o desenvolvimento da cor, o conteúdo de açúcares totais e vitamina C, a acidez titulável e a produção de compostos voláteis. De acordo com os resultados obtidos as concentrações de 2% O2 e 3% O2 a 12C foram as mais eficazes para atrasar o amadurecimento dos frutos, principalmente quando o período de armazenamento foi de 14 dias. Os tratamentos com altos níveis de CO2, por outro lado, não atrasaram o amadurecimento dos frutos.

Tomato is one of the most important vegetable crop produced in Brazil and USA. In Florida, USA, tomatoes are harvested at green stage, it leads to a longer postharvest life but, in the other hand, to a poor quality when they reach edible maturity. The harvest in Brazil usually happens when more than 30% of fruit surface turned to red, these tomatoes have a better quality but for a short time. The ideal would be a scheme that gathers a long postharvest life with a good final quality. Controlled atmosphere and low temperature storage have been used to delay ripening and senescence of fruits and vegetables. The purpose of this research was to study the effects of controlled atmosphere storage on tomato quality. Tomatoes (cv. Agriset) was harvested at breaker stage (less than 10% of red coloration) and storage in a flow through system at 12C at various atmospheres (2% O2, 3% O2, 4% O2, 2% CO2, 4% CO2, 7% CO2 e air) for 7 and 14 days. After storage, fruits were allowed to ripen in a 20C chamber until they reach edible maturity (when noticeable softening began), when weight loss, firmness, color, total sugars, titratable acidity, vitamin C an volatile production were measured. Our research suggested that 2% O2 and 3% O2 are the best atmosphere concentration to delay ripening when breaker tomatoes are storage for 14 days at 12C. However, fruits treated with high CO2 didn't show a delay on ripening.
