Este trabalho apresenta um estudo sobre a utilização dos conceitos de modelagem aplicada à indústria sucroalcooleira, visando obter um maior conhecimento sobre as cadeias de atividades produtivas neste ramo de empresa e, assim, fornecer subsídios para a construção de modelos para estudos de simulação das atividades do setor de açúcar e álcool. Utilizou-se uma empresa modelo para a aquisição das informações. Os modelos das cadeias de atividades foram validados com o auxílio da ferramentade rede de Petri, através da análise de alcançabilidade, onde são simulados todos os caminhos possíveis. O estudo resultou em 14 conjuntos de atividades, englobando todas as etapas do sistema produtivo sucroalcooleiro, desde o plantio da cana até a expedição do açúcar e do álcool

This Work presents a study about the use of the concepts of appiied modeiling to the sugar cane industry, seeking to obtain a larger knowledge on the chains of productive activities in this company section and, like this, to suppiy subsidies for the construction of models for simulation of the activities of the section of sugar and alcohol. A company model was used for the acquisition of the information. The models of the chains of activities are validated with the aid of the Petri net tool, through the reachability analysis, where all the possible paths are simulated. The study resulted in 14 groups of activities, including all the stages of the sugar cane productive system, from the planting of the cane to the expedition of the sugar and of the alcohol.
