A análise sensorial é uma metodologia científica utilizada para mensurar, avaliar e interpretar reações relacionadas às características de produtos tais como são percebidas através dos sentidos. Os testes descritivos, que compõem parte da análise sensorial, exigem controle criterioso de possíveis variáveis, tais como ambiente do teste, armazenamento das amostras, condições da pele dos painelistas, seleção e treinamento de atributos do produto a serem avaliados. A proposta do treinamento é proporcionar a mesma experiência sensorial aos painelistas através do uso de conceitos, terminologias, protocolos, escalas e ampla variedade de amostras, o que é essencial para estabelecer um quadro comum de referências, cujo propósito é remover a conotação "subjetiva" desta metodologia. Em pesquisas realizadas anteriormente, foram obtidas respostas coerentes, similares e com pequenos valores de desvio padrão após treinamento de três meses com o painel. Este mesmo treinamento foi replicado com novos painéis e sob novas coordenações. Análises sensoriais realizadas por deficientes visuais também foram obtidas neste estudo. Além disso, a comparação entre análises realizadas por painelistas brasileiros e por painelistas franceses também se fez possível. Mais uma vez obtivemos respostas coerentes e similares considerando-se todos os painéis analisados, sugerindo que a deficiência visual não impede a análise sensorial de textura e visuais de cosméticos e também que as diferenças culturais não influenciam a percepção de um painelista treinado. Por fim, foi possível estabelecer correlação entre análises sensoriais e análises de textura em texturômetro, sugerindo-se que a realização concomitante de ambos é de grande valia para o desenvolvimento de produtos de sucesso

Sensory analysis is a scientific method used to measure, analyze and interpret reactions related to product characteristics such as perceived through the senses, responding to much more than simply preference for one product over another. Specific scientific methods have been developed to measure or estimate objectively, accurately and reproducibility human responses to stimuli that they are submitted. Descriptive tests, which are part of sensory analysis, require careful control of possible variables that can affect the results, such as test environment, sample storage, skin conditions of the panelists, product attributes selection and training. Training proposal is to provide the same sensory experience to panelists through the use of a wide variety of references samples, concepts, terminology, protocols, and scales, which is essential to establish a common framework of reference, whose purpose is to remove the "subjective" connotation from this sensory methodology. In previous research, obtained answers were consistent, similar and with small standard deviation values after three-months training sessions. This same training was replicated with new panels and under new coordinations. Analyzes performed by visually impaired people were also obtained in this study. In addition, the comparison between analyzes carried out by Brazilian panelists and by French panelists also became possible. Through the use of this methodology, we obtained coherent and similar answers among all analyzed panels, suggesting visual impairment does not preclude sensory analysis of cosmetic texture and also that cultural background does not influence the perception of a trained panelist. Finally, it was possible to establish a correlation between sensorial analysis and texturometer texture analysis, suggesting that concomitant accomplishment of both is profitable for development of successful products
