O cromo (Cr3+) é um micromineral orgânico que atua como potencializador da insulina metabolizando lipídeos e glicose. A suplementação de Cr pode beneficiar o desempenho e a saúde animal. O objetivo deste estudo foi avaliar os efeitos de duas doses suplementares na forma de propionato de cromo, sobre o desempenho, características de carcaça e qualidade de carne, e sua interação com os minerais presentes no sangue, músculo e osso. O experimento ocorreu no Galpão de Digestibilidade e Metabolismo do Departamento de Zootecnia na Faculdade de Zootecnia e Engenharia de Alimentos da Universidade de São Paulo, no campus de Pirassununga, São Paulo. Foram utilizados 29 cordeiros machos sem padrão racial definido divididos em 3 tratamentos: CTL sem adição de cromo, Cr0,5 0,5 mg/kg de MS de propionato de Cr e Cr1,5 1,5 mg/kg de MS de propionato de Cr. No período de 64 dias de confinamento, foram coletadas as informações para desempenho e sangue para as avaliações de parâmetros bioquímicos e hemograma. No abate houve coleta de dados para avaliar as características de carcaça e carne, peso de vísceras e fêmur para densidade óssea. O delineamento experimental foi inteiramente casualizado, comparou as médias pelo teste de Tukey a 5% de probabilidade. Houve efeitos em relação ao consumo (P<0,0001) e a eficiência alimentar (P=0,0002). Na concentração de minerais na carne, houve interferência do Cr (P=0,0341). Para os parâmetros bioquímicos sanguíneos, foi observado diferença estatística significativa no colesterol (P=0,0023), na fosfatase alcalina (P=0,0274) e na concentração de fósforo (P=0,0213). Para as respostas imunológicas observou-se que o Cr melhorou os parâmetros de leucócitos totais (P=0,0126), linfócitos (P=0,0476) e monócitos (P=0,0058). Não foi observado efeito do Cr em relação as características de carcaça, proporção dos cortes comerciais, qualidade de carne, peso de vísceras e densidade óssea. Em relação aos parâmetros bioquímicos e imunidade dos cordeiros, a melhor dose a ser considerada é a de 0,5 mg/kg de MS de propionato de cromo.

Chromium (Cr3+) is an organic trace mineral that acts as an insulin enhancer by metabolizing lipids and glucose. Cr supplementation may benefit animal performance and health. The aim of this study was to evaluate the effects of two additional doses in the form of chromium propionate on performance, carcass characteristics and meat quality, and their interaction with minerals present in bone, muscle and blood. The experiment took place in the Digestibility and Metabolism Shed of the Department of Animal Science at the Faculty of Animal Science and Food Engineering of the University of São Paulo, on the campus of Pirassununga, São Paulo. A total of 29 uncastrated male lambs with no defined pattern were divided into 3 treatments: CTL no chromium added, Cr0.5 0.5 mg/kg Cr propionate DM and Cr1.5 1.5 mg/kg Cr propionate DM. During the 64 days confinement period, information for performance and blood were collected for the evaluations of biochemical parameters and blood count. At slaughter, data were collected to evaluate carcass and meat characteristics, viscera and femur weight for bone density. The experimental design was completely randomized with means compared by the Tukey test at 5% probability. There were effects in relation to consumption (P<0.0001) and feed efficiency (P=0.0002). In the concentration of minerals in the meat, there was interference of Cr (P=0.0341). For blood biochemical parameters, a statistically significant difference in cholesterol was observed (P=0.0023), alkaline phosphatase (P=0.0274) and phosphorus concentration (P=0.0213). For the immune responses, it was observed that Cr improved the parameters of total leukocytes (P = 0.0126), lymphocytes (P=0.0476) and monocytes (P=0.0058). No effect of Cr was observed in relation to carcass characteristics, proportion of commercial cuts, meat quality, viscera weight and bone density. Regarding the biochemical parameters and immunity of lambs, the best dose to be considered is 0.5 mg/kg of chromium propionate DM.
