O estilo de vida contemporâneo tem aumentado a demanda por produtos alimentícios que proporcionem benefícios à saúde como os alimentos funcionais. Entretanto, a incorporação de diversos compostos bioativos nas matrizes alimentícias é dificultada pela característica hidrofóbica da maioria destes compostos, que também desfavorece a absorção no intestino. Este é o caso de muitos flavonoides como a quercetina, e sistemas de encapsulação como as micropartículas lipídicas sólidas são capazes de diminuir estes problemas. O presente trabalho de Mestrado teve como objetivo avaliar a digestibilidade in vitro de micropartículas lipídicas sólidas produzidas com óleo de babaçu como fonte de triacilglicerois de cadeia média (MCTs) e triestearina, e a bioacessibilidade da quercetina encapsulada nestes sistemas lipídicos. Foram produzidas dispersões variando-se a concentração de tensoativo (de 2,0 a 4,0%) e de óleo de babaçu (1,2, 2,0 e 2,8%). Os sistemas produzidos apresentaram diâmetro médio que variou de 700 nm a 1800 nm para as diferentes formulações e estabilidade físico-química durante 30 dias. Os resultados obtidos nos ensaios de digestibilidade in vitro indicam uma maior tendência de desestabilização dos sistemas produzidos com mais óleo de babaçu na fase gástrica. O resultado da hidrólise dos triacilglicerois mostrou que 30% de ácidos graxos foram liberados na fase intestinal, independente da formulação de micropartículas lipídicas. Os resultados de bioacessibilidade indicaram que em baixas concentrações de tensoativo há influência da concentração de triacilglicerois de cadeia média nas formulações e os resultados mais altos foram obtidos para as partículas contendo 2,8% de óleo de babaçu e 2,0% de tensoativo. Desta forma, pode-se concluir que os sistemas produzidos neste trabalho foram eficientes para preservação da quercetina, o que possibilita sua incorporação em sistemas alimentícios e também aumentou a bioacessibilidade deste bioativo.

Contemporary lifestyle has increased the demand for food products that provide health benefits as functional foods. However, the incorporation of bioactive compounds in food matrices is hampered by hydrophobic character of the majority of this compounds which also difficult the absorption in the intestine. This is the case of many flavonoids such as quercetin which has reduced bioactivity in plants. Encapsulation systems such as solid lipid microparticles are capable of solving these problems. The objective of this study was to evaluate the in vitro digestibility of solid lipid microparticles produced with babassu oil as a source of medium chain triacylglycerols (MCTs) and tristearin, besides the bioaccessibility of quercetin encapsulated in these lipid systems. Dispersions were produced by varying the surfactant (2.0 to 4.0%) and MCT (1.2, 2.0 and 2.8%) concentrations. The systems produced showed an average diameter ranging from 700 nm to 1800 nm for different formulations and colloidal stability for 30 days. The results obtained in the in vitro digestibility assays indicate a higher tendency to destabilization in gastric phase of the systems produced with more babassu oil. 30% of fatty acids were released in the intestinal phase for all formulations. The results indicated that bioaccessibility at low surfactant concentrations has the influence of the concentration of MCT in formulations. The highest results were obtained for particles containing 2.8% of babassu oil and 2.0% of surfactant. Thus, we can conclude that the systems produced in this work were efficient for preservation of quercetin, which allows its incorporation in food systems and also increased the bioaccessibility of this bioactive.
