O objetivo deste trabalho é apresentar o conceito revisado de Cozinha de Herança. Ele foi definido por Azevedo e Ortale (2019), a partir da realidade da gastronomia italiana da cidade de São Paulo, com base no conceito de Língua de Herança. A analogia entre a língua e a cozinha no plano estrutural de Montanari (2009) sustentam a definição de Cozinha de Herança que, assim como a língua, evidencia uma identificação cultural, carrega o sentimento de pertencimento a uma comunidade, sinaliza a origem, os laços afetivos e revela memórias (AZEVEDO & ORTALE, 2019). Em face desta definição, nesta etapa dedicada ao doutorado, ampliamos os estudos e trabalhamos com os pressupostos teóricos relacionados à memória, justamente pela necessidade de retomar histórias vividas para reconstruir a origem de algumas receitas que carregam a identidade italiana em sua essência. Assim, aprofundamos os estudos a partir das narrativas de brasileiros e imigrantes italianos, que se dedicam profissionalmente à gastronomia italiana e que encontraram na cozinha uma forma de preservação cultural e de construção identitária. Os participantes envolvidos foram ouvidos e acompanhados em sua trajetória profissional ao longo de uma década, considerando que a coleta dos dados teve início em 2013 e foi finalizada em 2023. Neste período, chegamos a indivíduos que tomaram para si a cozinha italiana por afinidade, sem nenhuma relação com antepassados nascidos na Itália - o que nos permite afirmar que a Cozinha de Herança também é transmitida e compartilhada no contato entre membros de uma ou mais comunidades de origens diversas. Essa abrangência se justifica pela inegável aderência da cozinha italiana na cidade de São Paulo. Além da contribuição teórica, espera-se que esta pesquisa possa trazer esclarecimentos acerca das diferenças mais marcantes entre a cozinha típica italiana da cidade de São Paulo e a cozinha típica da Itália

The aim of this work is to present the revised concept of Heritage Cuisine. It was defined by Azevedo and Ortale (2019), based on the reality of Italian gastronomy in the city of São Paulo, drawing from the concept of Heritage Language. The analogy between language and cuisine within Montanari's structural framework (2009) supports the definition of Heritage Cuisine, which, like language, underscores cultural identity, carries a sense of belonging to a community, indicates origin and emotional ties, and reveals memories (AZEVEDO & ORTALE, 2019). In light of this definition, in the doctoral stage, we expanded our studies and worked with theoretical assumptions related to memory, precisely due to the need to revisit lived stories to reconstruct the origins of some recipes that carry the Italian identity at their core. Thus, we delved deeper in our research through the narratives of Brazilians and Italian immigrants who are professionally dedicated to Italian gastronomy and who have found in the kitchen a means of cultural preservation and identity construction. The participants involved were interviewed and followed in their professional journeys over a decade, considering that data collection began in 2013 and was completed in 2023. During this period, we encountered individuals who embraced Italian cuisine out of affinity, without any connection to ancestors born in Italy, which allows us to assert that Heritage Cuisine is also transmitted and shared through contact among members of one or more communities of diverse origins. This considerable influence is justified by the undeniable popularity of Italian cuisine in the city of São Paulo. In addition to the theoretical contribution, we hope that this research can provide insights into the most significant differences between the typical Italian cuisine in the city of São Paulo and the typical cuisine from Italy
